Ettore Timi
Palazzo Corsini
Address: Via del Parione 11
see map
Built by the Corsini family in the first half of the 18th Century, this Baroque edifice is the successor of the Riario Villa designed by Ferdinando Fuga. Neighbouring Villa Farnesina, the site boasts a rather illustrious history, as it housed the
Accademia dell'Arcadia
in the 17th Century, was property of Cardinal Neri Corsini and served as a temporary residence for Joseph Bonaparte during the occupation of Napoleon. Now the
palazzo
houses the National Academy of Science and boasts one of the richest gardens in town – part of Rome's Orto Botanico.

This cooking school offers tastings of Tuscan and Florentine cuisine, plus excellent cooking lessons. Here is the place to find the original recipes for lasagne, ravioli, spaghetti, pizza and all the typically Italian foods which, in their greater part, are being prepared throughout the world in thousands of different ways. What turns out after a couple of lessons, however, is that real Italian food bears very little resemblance to what people have been fed in restaurants for decades. Abounding in parmesan, mozzarella, olive oil and balsamic dressing, these recipes are definitely worth trying.
