The capital of a small country, Brussels is a proud representative of a not-so-small culinary tradition. Commonly believed to be just a peculiar fusion of French and German cuisine, Brussels is slowly developing a unique brand of its own. Lapin à la Gueuze
Rabbit cooked in wheat beer is a great favourite of residents of the Belgian capital. This dish owes its unique favour to the locally produced Gueuze wheat, which is a special kind of lambic beer. It's produced by means of blending young lambic with older, naturally fermented lambic into a new kind of beer which is then bottled for further fermentation. Traditionally, the dish is served with a prune topping and accompanied by hot potato croquettes.

Brussels Bar Snacks
With over 800 bars scattered around the city, Brussels boasts a wide range of traditional bar snacks. One of the most common snacks which constitute a perfect addition to a cold glass of Belgian beer is kip-kap, a plate of assorted jellied cold meat cuts. Often, this includes pork cheeks. Kop is a selection of meat chunks from pork head. Be sure to sample platte kaas, a kind of creamy white cheese which tastes terrific when spread on a fresh baguette.

Poulet à la Bruxelles
This all-time-favourite of residents of the Belgian capital is a chicken steak stuffed with Brussels sprouts and cheese, then fried in beer and butter. Though rich in cholesterol, this dish is an obligatory element of every respectable restaurant in the city. It's usually served with a large portion of rice. Brussels-style chicken topped with mushrooms, Brussels sprouts, Swiss cheese and milk sauce also forms the basis of a popular casserole.

Dame Blanche
Dame Blanche is the best that Brussels restaurants have to offer in terms of dessert. A large portion of vanilla ice cream topped with warm chocolate sauce is a perfect conclusion to a hearty Belgian meal. Considering that the recipe for this dessert was developed in one of the world's confectionery capitals, you can expect it to satisfy even the most demanding connoisseur’s taste.
