The cheap neighbourhood trattorias, that Rome used to be famous for, no longer abound in the Eternal City. Now, apart from traditional restaurants, you'll find plenty of venues serving various regional cuisines and trendy fusion food. The traditional restaurants, which are most recommended to visitors, offer dishes prepared from fresh local produce, so the main recurring ingredients are lamb and vegetables. They are the base of many exquisite dishes that will let you experience the taste of Italy. Keep in mind that Italians usually have dinner late, after 8pm, so that's when the restaurants are brimming with customers. Before going out to dinner, be sure to check the opening hours of the venue as the Italians never forget about their siesta. More or less between 2 and 5pm most restaurants are closed.
