Madrid gathers what is best from all of Spain and the food that you can find in the Spanish capital can give you an idea of what is served in particular regions of this vast country. The most popular dishes you can order in Madrid are Cocido Madrileño – a kind of stew made from chick peas and vegetables and Sopa de Ajo – garlic soup. Every tourist will find something to suit their liking, as there are both many elegant restaurants and many, more homely, tapas bars. Tapas bars are a separate gastronomic tradition and many people put a lot effort into preserving these venues.
